
As requested, here's the recipe for the layered chocolate fudge cake.
It's in Donna Hay Flavours (just in case you've got that v.good book at home)
75g butter
1 tsp vanilla extract
8 eggs
1+1/3 cups sugar
2/3 cup cocoa
1 cup plain flour
fudge filling:
375g dark choc chopped
3/4 cup cream
155g butter
Preheat oven to 180 c, line the bases of two 20cm cake tins with baking paper.
Melt butter & vanilla in saucepan, cool slightly.
Place eggs & sugar in bowl and beat (electric) for 8 mins or until mix is light, creamy & tripled in bulk.
Sift flour & cocoa twice then sift over egg mix & fold lightly with butter mix until just combined.
Divide into two cake tins. Bake for 25 mins. Cool in tins. Cut each cake into two layers.
For fudge filling, place choc, cream & butter in saucepan over low heat & stir until smooth.
Refrigerate until cool then beat (electric) until light & fluffy.
Sandwich filling between layers of cake and spread over the top!
I only have a hand-held blender and that worked ok. Filling needed a bit of pre-mixing to re-soften after being in the fridge.
NOTE: this cake recipe says it serves 10 to 12, and even if you think you're a chocoholic, I think they're right.
